Mango Thai Salad Recipe

I recreated the mango salad from my favorite Thai restaurant and for someone who doesn’t cook so much the difficulty level was quite simple but my goodness it’s delicious.  This mango salad recipe can feed 2 to 4 people.

1 unripe/green mango (make sure it’s firm, you will not be able to julienne a ripe one as they are too juicy)
1 sweet red pepper
1/4 cup sweet red onion (add as much or little as you prefer)
1/4 cup cilantro (add as much or as little as you prefer)
1/8 cup of crushed peanuts (optional using Mortar & Pestle)

Julienne mango, sweet red pepper (the Borner V-Slicer makes it easier) into medium or large cuts. Mix in bowl.  Cut up the cilantro in to smaller pieces.

Dressing:
2 tbsp lime juice
1 tsp granulated sugar (you can add up to 4 tsp)
4 tsp fish sauce
1 tbsp vegetable oil
1/4 tsp chili sauce

Whisk or blend with the KitchenAid Immersion blender all dressing ingredients. Add to bowl, toss and top with crushed peanuts. Enjoy
